Self-Serve vs Set-Up Catering Models
Before getting started on a catering menu you will want to
determine what type of services you will offer.
Self-Serve Catering:
Food is either picked up from you or dropped off on location
and customers serve themselves from disposable chafers and
serving dishes.
Set-Up Catering:
Where caterers set everything up on buffet tables and guests line
up and help themselves. Food is generally served from chafers and
serving trays with staff replacing food on the table as needed.
Set-up models can also include action stations where chefs
prepare specialty plates, usually in a cook-to-order format.
Banquet Set-Up Catering:
Plated meals are served simultaneously to guests as they are
seated. All plates are set up the same, so there is no worry of
running out of popular menu items before everyone has been
served. This service requires additional waitstaff, but service time
is limited to an hour or two at most.
