Avoiding the Danger Zone
Time-temperature abuse happens any time food remains between 41º to 135ºF. This range is called the temperature
danger zone and, to maintain food safety, you must limit the time food temperatures fall within this range. Use cold
paddles (sometimes called "ice wands") to bring soups and stews safely out of the danger zone. Simply freeze
overnight or add ice and cold water to the opening. As you stir the food with the paddle, the integrated cooling fins
reduce the heat and lower the overall temperature of the food, allowing for safe, refrigerated storage.
